Vegetable Uttappam/Ootapam/oothappam.
Uttappam's can be made either with vegetables mixing with the batter or with topping them after spreading into small dosas....I have already posted Uttappam after mixing with batter ...that is my recipe of carrot Uttappam...this recipe is of vegetables topping after spreading..
Batter( idli/dosa batter) - 2 cups for each person
Onion - 1 small chopped fine
Vegetables - 2 cups chopped fine( Mixed vegetables like beans, carrot, peas, capsicum,cabbage, corn....)
Salt as needed
Chilli powder - 1 tsp
Cumin seeds - 1 tsp
Oil - 1 tbsp for frying
Oil for spraying
Heat oil in a pan first add cumin seeds and wait for few seconds and add onions... fry till they are transparent and then add mixed vegetables( if adding cabbage add after 3 - 4 mts)... fry till they soft but firm. Finally add salt and chilli powder, mix well and stir for a minute. Remove and keep aside.
Heat a tawa/griddle ...take a ladle full of batter and spread as small and thick dosas/uttappam's... take 1 - 1 1/2 tbsp of the vegetable mix and spread it /top it over the spread dosa...it will stick to the batter...spray some oil over the dosas... cook for a minute... turn to cook other side as well... serve with any type of chutney's and or sambar.
