My 250th Blog Post...so wanted to post this item( something special and simple), though had prepared it few days back.
Recently have become a big fan of mexican dishes...so after making some cheese quesadilla's wanted to try something with few vegetables for me to eat. So this is what I tried , and it came out real good..some of my friends who also tasted it, liked it a lot and asked for more simpler recipes like this.
Flour tortillas - 4 ( I have used spinach tortilla)
Mozarella cheese grated -1 - 1 1/2 tbsp for each tortilla
vegetable stuffing - 3 tbsp
For making vegetable stuffing:
Onion - 1 small chopped into thin length wise
Carrot - 1 peeled and chopped into 2 inch thin length wise
capsicum - 1 chopped into thin length wise
Cabbage - 1 cup chopped into thin length wise
Salt
Pepper powder - few sprinkles
Oil - 1 tbsp ( can also use olive oil)
Heat oil in a pan/kadai and add onions... fry till they are transparent...next add capsicum fry for 3 - 4 minutes and then add carrots ...fry again for 2- 3 minutes...next add cabbage...fry well till all vegetables are soft but firm...add pepper powder and salt in the end( so it does not make the vegetables soggy)....can also add some sauces like soya or chilli ...but make sure you don't make it very soggy ..just few drops only..
Take a tortilla..add the stuffing in the middle and cheese...fold it into half and press lightly so it spreads well... instead of the oven...to make it simple have used the tawa/griddle...heat the tawa and place it slowly on it...with the help of a spatula press lightly on top ... turn and cook other side... this will make the cheese to melt and stick the tortilla together....serve as it is or with a pizza cutter cut into half or 3 equal triangles.
