Mirchi ki salan or Mirchi ka salaan
Green long chillies( Bajji chilli variety) - 2
Onion - 1 big
Tomato - 2
Garlic - 3 or 4 flakes
Ginger - 1 inch piece
Tamarind - small marble size( soak in a cup of water for 20 mts and extract pulp)
Peanuts - 2 tbsp
Sesame seeds - 1 tbsp
Cumin seeds - 1 tsp
Chilli powder - 1 tbsp
Turmeric powder - 1/4 tsp
Garam masala powder - 1 1/2 tsp
Coconut - 1/4 cup
Salt as needed
Oil - 2 tbsp
Remove stalk from green chillies and cut into thick cubes or into 4...spray some oil and keep it in the oven under broil for 10 minutes....OR you can also shallow fry and keep it aside.
Heat 1 tbsp of oil in a pan/kadai and add chopped onions( keep aside 2 tbsp of chopped onions aside)...fry for 3 - 4 minutes and add garlic and ginger...fry till onions are light brown...next add chopped tomatoes and fry till they are mashed and pulpy ... keep it aside.
Dry roast peanuts, sesame seeds and cumin seeds seperately...remove skin from peanuts...
Grind together onion ,garlic, ginger, tomato mixture with peanuts, sesame seeds , cumin seeds and coconut to a fine paste.
Heat 1 tbsp of oil and add ( for extra flavor, cardamom, clove and cinnamon)...add 2 tbsp of chopped onions and fry till they are transparent... next add all the powders and mix once....immediately add the ground paste... also add tamarind pulp , salt and cook till the raw smell leaves...just before removing add the broiled green chillies... goes well with chapathis/rotis and also try with rice.
