0 PINEAPPLE KESARI


Sooji fine/small rawa - 1 cup
Sugar - 1 3/4 cup
Water - 2.5 cup
Pineapple chunks crushed with juice - 1/2 cup
Pine apple small chunks - 3 tbsp
Food colour lemon/yellow - a dash/pinch
Cardamom powder - a pinch
Cashew and raisins - 6
Ghee - 4 tbsp


Dry roast sooji in a kadai till they are light brown/pink...remove and keep aside.


Heat 2 tbsp of ghee in the kadai and fry cashew and raisins till they are light brown...remove and keep aside...in the same kadai add water and food colour( I did not have proper yellow color, so instead have used kesar yellow so it has given a light orange color).


Allow it to boil and bubble up well...once done reduce flame and add roasted rawa...cook for 3 - 4 minutes and add pine apple chunks(crushed) with their juice and cook again for 2 - 3 minutes....then add sugar and cook for another 3 - 4 minutes or till done. Finally add the pineapple small chunks, remaining ghee, cardamom powder and fried cashew and raisins....You can also add a dash of pineapple essence for additional flavor and taste.
