Tindora/ Kovakkai Fry.
A simple and delicious side dish that goes very well with rice and gravy. Can also serve as a side dish with chapathi's.
Tindora/Kovakkai - 3 cups chopped into small round pieces
Onion - 1 medium chopped fine
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp
Curry leaves - few
Chilli powder - 1/2 tbsp
Turmeric powder - 1/4 tsp
Kitchen king masala powder - 1/2 tbsp
Salt as needed
Oil - 1 1/2 tbsp
Transfer tindora in a microwavable bowl...add a tbsp of oil and cook in the microwave for about 10 minutes...if needed can sprinkle little water ...you can open in between ...stir and keep it back.This will reduce the frying time as well the texture will be good.
Heat a tbsp of oil in a kadai and add mustard seeds, urad dhal and curry leaves...when they splutter up add onions and fry till golden brown...then add the semi cooked tindora and fry for five more minutes or till done...add salt and the powders...saute and fry for 2 more minutes.
Variation:-
1. Dry roast 2 tbsp of peanuts...remove skin and powder coarsely and add it to the tindora just before removing.
2. Add 2 tbsp of grated coconut just before removing.
