I first tasted Neer dosa given by my neighbour in Bangalore who was from Mangalore....it was so soft,thin and tasted really good... mom asked the recipe and since then she has been making it regularly. Neer in Kannada means water so the batter itself is very liquidy. The other main thing is it does not require fermentation ...so can make dosas immediately after grinding or can set it aside for 45 - 60 minutes.
For the neer dosa batter you need :
Raw rice - 2 cups
Salt as needed
Grated coconut(optional) - few tbsp around 4 - 5
Water - 2 cups
Wash and soak rice in water for 3 - 4 hours and grind along with a cup of water and grated coconut(optional...my mom never adds these and they come out good) to a smooth batter...remove ...add salt and 2 cups of water...it should be watery than other regular dosa batter. Set it aside for one hour.
Heat a tawa/griddle( nonstick preferred)...pour a ladle full of batter and tilt the griddle so the batter can spread all sides, spray some oil...cover the griddle or tawa with a plate and allow the dosa to cook for 2 minutes....remove and transfer to plate and wait for 20 - 30 seconds and then fold like a handkerchief( first into half and then again one more fold)...if needed can cook the other side of the dosa too...but not very much required ... this is one of my favourite though I make these dosas very rarely always wait for my mom to cook these when she visits us.
Before Non stick griddles came into use, a thick dosa griddle was used to make this dosas. In Kannada it is called as henchina kallu

HI... I TRIED AS U TOLD PPROCEDURE, BUT ITS CAME TO HARD..I TOOK MORMAL RICE, WICH I USE TO COOK RICE DAILY,,,AND WATER THATS ALL...KINDLY TELL ME, HOW TO MAKE IT SOFT..
You can try adding some grated coconut and or some precooked rice - just a handful and add it when grinding. Hope this will help you Mona.

Hi Shruthi, Thanks for visiting and leaving your comment. Regarding direct usage of rice flour, I am not fully sure if it will turn out soft like we get dosas with grinding the rice. May be can take a part of it and grind with coconut flakes or grated coconut and soak for couple of hours together. To be very exact will try out once and let you know.

Regarding using different type of rice, I think you can use longcorn rice but not sure of Basmati rice due to its strong flavor. You can add some cooked rice to make it more soft as you are using different type of rice. Hope this will help you.

Hi Sumi,
Neer Dosa is very different from aappam. In this dosa we just soak and grind rice and pour instantly, whereas in aappam we use 2 different types of rice along with urad dhal and methi seeds.
Also for aappam we use a pan/kadai and deep dish to pour and cook the batter. For this dosa we use the tawa or griddle to cook.

The best side dish that goes for dosas are spicier ones like Non veg curries for Non Vegetarians.
For Vegetarains can serve with spicy coconut chutney or tomato chutney or any spicy gravies or kurmas or tomato based curries.
My neighbours used to serve this with coconut chutney and beans gravy( under gravy section in my blog)

Hi Padma,
While making dosas, tawa/griddle should be very hot or normal means in what heat flame need to prepare dosas? and, before pouring the batter on to tawa, its not required to apply oil with the help of onion on to tawa?

Hi Shilpa for making neer dosa the tawa has to be hot. So when poured it will sizzle and add few drops of oil and cook covered with a lid.
If the tawa is sticky then it is good to add few drops of oil, may be not for each and every dosa, but after few intervals. if it is non stick tawa then no need to add anything. Just wipe and pour dosas.

Thanks for yummy dosas..i really wanted to try these but kept on postponing..after reading urs i tried right away and there were tooo good, i just made variation by adding soaked oats to batter and they were as good as original :) I prepared the batter pervious nite and kept in fridge and removed frm fridge abt 2hrs before preparing..they were good...My hubby just lost the counts and ate them to content..i served them with tomato-onion chutney.. Thanks a lot for such a simple yet YUMMY dish..good luck take care

I would suggest adding some thick coconut milk if you want to try with the same batter. Hope this will help you Tanushree.

Today... that was before looking up this recipe tried making neer dosa with ready made rice flour and water. mixed and instantly poured out. I tried this lovely recipe,it tasted good ...but my only problem is that, it turned out quite sticky and soft.
I used normal raw white rice,soaked for 3 hours .
Whilst grinding,it didnt become a complete paste,there were fine particles of rice (like sand) in the batter.
Could you let me know the reason behind the stickiness of the dosa?
