0 NAVARATHNA KURMA
Navarthna Kurma is a creamy and rich gravy that goes very well with any type of parathas/naan. You can use different type of vegetables.
Mixed vegetables - 2 or 3 cups all chopped
( Green beans, carrot, Potato, peas, sweet corn, cauliflower etc...)
Onion - 1 chopped fine
Tomato - 2 or 3 chopped fine
Ginger garlic paste - 1 tbsp
Chilli powder - 1 tbsp
( can use kashmiri chilli powder for good colour)
Dhaniya powder - 1 tbsp
Garam masala powder - 1/2 tbsp
Cardamom - 2
Clove - 3
Cinnamon - a small piece
Milk - 1 cup
Cashew nut paste - 1/2 cup or
Cream - 4 tbsp
Salt as needed
Butter - 1 tbsp
Pineapple chunks - 3 tbsp
Oil - 2 tbsp
Variation :-
Can use any or all of these -fresh grapes, tutti fruity, fried raisins, fried cashew pieces , fried paneer just before removing for additional taste.
Wash and chop all vegetables into small pieces and put them in a pressure pan and cook for just one whistle or on stove up till the vegetables or soft....can also use microwave...just add vegetables...sprinkle little water and cook for around 10 to 12 minutes.
Heat oil in a kadai/pan and add cardamom, clove and cinnamon...next add chopped onions and fry till golden brown...then add ginger garlic paste and saute for a minute and add tomatoes...mash very well and cook till they are pulpy...now add all the powders and mix...then add the cooked vegetables and milk...reduce flame and stir to cook for additional 5 minutes...finally add salt and cashew paste and or cream and allow everything to cook for just a boil or 3 to 4 minutes...just before removing add pineapple chunks and butter...and can also add any in the variations mentioned above...goes well with any chapathi's/poori's/parathas.
This is one of kids favourite gravy and also my hubby's.
