Vendakkai/okra/ Ladies Finger/ Bendekkaayi/ Bendakaaya Fry
Okra - 1 pack ( around 20)
Onion - 1 medium
Chilli powder - 1/2 tbsp
Curry leaves- 1 sprig
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp
Coconut grated - 1 -2 tbsp
(optional)
Salt as needed
Oil - 1 - 1 1/2 tbsp
Wash and dry okra and cut into small round pieces...add everything in a microwavable bowl with few drops of oil..mix and cook in the microwave for 5 to 8 minutes...you can also take out in between...mix and put it back in...this reduces the frying time as well as the stickiness in okra gets removed fast.
Heat oil in a kadai and add mustard seeds, urad dhal and curry leaves..when they splutter up add onion and fry till light brown...then add the semi cooked okras and fry for few more minutes( around 5 minutes)...finally add salt and chilli powder...saute...if needed can add grated coconut or can avoid it sometimes...goes well with rice as a dry curry.
If you do not want to use microwave then you can fry them fully in the kadai itself..but will take some extra time...add salt only in the end.
