4 KALAKAND

I had posted my recipe for kalakand a few days back, but got to upload the photo only today...my friend Senthil Vadivu helped me shape the kalakand just for this snap...as tomorrow being a VALENTINE'S DAY, she shaped it like a heart and decorated it with some almond flakes.

Got this recipe from a friend few years back and since then have tried it many number of times and it has been a huge hit...it really tastes great ...initially I felt that there were lot of ingredients...but finally the result was good also in quantity .

We need

1.Ricotta cheese - 1 pack ( 15 oz)
2.Sugar - equal qty as the emptied container of ricotta cheese box.
3.Non fat dry milk powder - equal qty as the emptied container of ricotta cheese.
4. Whipping cream - 1 pint
5. Butter - 1 stick
6. Cardamom powder - 1/4 tsp
7. Pista - few cut into small pieces for garnishing
8. Almond flakes - few for garnishing

Add ricotta cheese, sugar, milk powder, cream and butter in a large microwavable bowl...mix well and cook in the microwave for 5 mts...keep checking...remove stir in and put it back for 5 more minutes ...remove ,stir and cook again for another 5 minutes....checking from now on( they might spill out of the container...so always use a heavy,deep and big glass microwavable bowl...or if not...mix well microwave for 5 mts...remove and make 2 partition and cook in 2 batches) in a medium size microwavable glass bowl....repeat the process 2 or 3 times until the colour of it changes to a light brownish and almost reaches to a semi thick consistency ... remove and add cardamom powder..mix and transfer in a flat tray...let it cool for 10 mts..cut into small squares and garnish with pistachios and almond flakes and enjoy your easy and tasty microwaved kalakand.

Is there a substitute for the milk powder? Can I use milk instead?

Soujanya - yes you can add milk... instead of milk powder, but can also skip using cream.
