Bittergourd is one such vegetable no matter in whatever way my mom used to cook, never had it anytime....then slowly started to think of cooking them after marriage...but did not know in what way until I found this simple method by many trials and errors...since then I always cook bitter gourd only in this method.
To cook this we need
Bittergourd - 4
Chilli powder - 1 tbsp
Turmeric powder - 1/2 tbsp
Salt - 1 tbsp
Tamarind - 2 inch piece
Oil - 2 tbsp
Soak tamarind in water for 30 minutes and extract pulp.
Wash and cut bittergourd/pavakkai into thin round shapes...to this add chilli powder, turmeric powder, salt and
tamarind pulp...mix everything and keep it aside for
2 hours( minimum)...
Later drain and squeeze out water very well ... place the bittergourd pieces in a plate microwavable safe plate ...add 1 or 2 tbsp of oil ...mix and cook in a microwave for about 12 - 15 minutes.....keep checking after 10 minutes or so...if needed take out in between mix and place it back...if you want it to be more crispier , then you can cook for few more minutes.
In case if you want to avoid cooking in microwave ..then you can also deep fry in oil..squeeze out water and heat oil in a kadai and drop the pieces and deep fry till light brown.

I used to add the right quatity of tamarind pulp, so that u need not squeeze.Add 2 tablespoons of corn flour and mix it before frying.Adding a little bit of jaggery will make the kids eat it too.
