Potato Capsicum fry is a simple and tasty dry dish that goes well with rice and chapathis. Can use multi colored peppers for additional taste and look.
Aloo/Potato - 4 peel n cut into cubes
Capsicum/Bell pepper - 2 medium cut into thick pieces( can use multi colours )
Onion - 1 medium chopped fine
Chilli powder - 1/2 tbsp
Dhaniya powder - 1/2 tbsp
Salt as needed
Oil - 2 tbsp
For temperings:
Mustard seeds, urad dhal, jeera/cumin seeds - all few.
In a kadai heat oil and add the temperings, when they splutter up add the onions and fry till they are transparent. Next add just the capsicum and fry till they are 3/4 th cooked. Remove and keep it aside. In the same kadai add potatoes and fry well, add salt, when they are 3/4th cooked add the fried capsicum and mix well... check salt or add needed salt. Finally add the chilli powder and dhaniya/coriander powder.
Frying capsicum seperately won't let the capsicum to get soggy. It can be served with chapathis/rotis or with rice as a side dish. Can use different colours of capsicum so it looks colourful and more tasty.
