Pav/Paav Bhaji is a famous street side food/chat item. Love this dish as it is very simple and easy to prepare at home. Can he had as a snack or even as a meal. Will surely fill our stomach. My son's love this and I often prepare this at home for dinner.
Paav/ Buns - 6 or as needed for your family
Vegetables mixed - Potato - 2 medium
other veggies like -beans/carrot/ peas/cauliflower/corn and any other of your choice mixed - 2 cups
Capsicum - 1 small chopped fine
Onion - 1 medium chopped fine
Tomato - 2 small or 1 medium chopped fine
Ginger garlic paste - 1 tbsp
Chilli powder - 3/4 tbsp
Pav Bhaji masala powder - 1 tbsp
Butter - 1 tbsp
Oil - 2 tbsp
Cilantro - few leaves chopped
Salt as needed
Lemon/lime - 1 small
Pressure cook all the chopped vegetables( wash and peel the potatoes into half and chop all other needed veggies and take them all in a vessel, add water just enough to immerse and cook in the cooker for 4 whistles or until they are very soft. Remove and mash well.
In a kadai/pan heat butter or oil and add onions, fry till they turn light brown, next add ginger garlic paste and saute for a minute. Now add the tomatoes and mash and cook well. Next add capsicum which is optional and fry for 3 - 4 minutes. Then add the all the powders and saute once. Finally add the mashed vegetables , salt and little water and cook for few minutes. Garnish with chopped coriander leaves and top it with some lime juice or add juice just before serving.
Toast buns both sides with little butter on a tawa/griddle until they are light brown.
Garnish the bhaji/gravy with chopped onions, cilantro and lime juice and serve with buns.
