This is a curry made from drained water after cooking dhal with greens and or any vegetables.This curry looks simple.. but tastes awesome.
Greens any number of variety mixed - 3 cups chopped
( Methi, Palak, Dill, ...any variety mix)
Toor Dhal - 1/2 cup
Red chillies - 5 No
Dhaniya/coriander seeds - 1 tbsp
Jeera/cumin seeds - 1 tbsp
Black Pepper - 6 to 8Coconut - 1/2 cup grated
Onion - 1 medium
Tomato - 2 medium
Garlic - 6 No
Tamarind pulp - 1/2 cup diluted( 2 inch soaked in water and pulp extracted)
Jaggery - a small piece(optional use)
Seasoning:
Mustard seeds, urad dhal, curry leaves
In a vessel cook toor dhal with 3 cups of water and garlic 2 pods. when they are 1/2 cooked add the greens and cook till they are done( may be around 10 minutes). Remove and drain out the water.Do not throw it out as the main gravy is with this water only. The drained dhal and greens can always be used as a side dry curry for rice or chapathi by giving temperings.
In a kadai fry red chillies, jeera, dhaniya, pepper till they turn light brown and keep aside...in the same kadai fry onions for 3 minutes then add garlic(remaining)and saute ..then tomato. Cool and make a paste of everything(red chillies...onion..and coconut) with coconut.
In a vessel pour in the drained water, add the tamarind pulp and the ground paste. Can add jaggery at this point if needed(this gives a good taste),Cook for 10 minutes. Add salt and cook for 5 minutes.
Season it with mustard seeds, urad dhal, curry leaves.
This curry looks to be plain ..but the taste is very different and very good...usually goes well with rice and or ragi mudde/ragi kali/ragi balls.
Variation:Instead of the greens you can use any vegetable like beans, carrot, cabbage etc...and make a dry curry out of it draining the water.
This curry can also be made with puran poli stuffing left over...it will taste great...
The drained greens you can always make a side dish.
Heat oil in kadai add mustard seeds, urad dhal, jeera and curry leaves..when they splutter up add onions and fry till light brown...next add few broken red chillies or 1/2 tbsp of chilli powder, salt and the greens with dhal..mix and enjoy your dry curry.
